<p><strong>Ingredients</strong> &#8211; You can use whatever veggies you have on hand. The day I made this fritatta I had our chicken&#8217;s eggs, pasture butter, green garlic, asparagus, spinach, morels, and an onion. Not pictured is grated cheddar cheese. You also need an oven safe skillet.</p>
<p>Frittatas are essentially a baked omelet. They are a perfect way to use whatever vegetables you have in your kitchen. With your Cloudview CSA Box you could use scapes, bok choy, cabbage, kale, and/or spinach.</p>
<p>1. Chop up and begin sauteing vegetables. Preheat oven to 350.</p>
<p>2. Start with veggies that take the longest to saute.</p>
<p>3. Once veggies have cooked, toss in spinach to wilt it down.</p>
<p>4. Add black pepper, coriander, chili powder, stir with veggies.</p>
<p>5. Pour in whisked eggs&#8230;I usually use about 12 eggs for a full size cast iron skillet.</p>
<p>6. Reduce heat to med/low and cook on stove for about 5 minutes.</p>
<p>7. Sprinkle grated cheese on top</p>
<p>7. Put cast iron skillet into oven, cook for 20 minutes or until done. For the last few minutes, consider switching the oven to Broil to brown the cheese but be careful&#8230;you can easily over-brown. Just a few minutes of broil is enough.</p>
